1 First Street rotisserie chicken, shredded or chopped
2 celery stalks, thinly sliced
4 green onions, sliced
1 apple, diced
â…“ cup sliced almonds
â…“ cup plain Greek yogurt
â…“ cup mayonnaise
Juice from ½ lemon
2 tablespoons Dijon mustard
Salt, to taste
Black pepper, to taste
Directions
- Remove the skin and bones from the rotisserie chicken and chop or shred the meat into bite-sized pieces. Add the chicken to a large mixing bowl.
- Add the celery, green onions, diced apple, and sliced almonds to the bowl with the chicken.
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and black pepper until smooth.
- Pour the dressing over the chicken mixture and stir until everything is evenly coated.
- Taste and adjust seasoning if needed.
- Serve immediately, or cover and refrigerate for at least 1–2 hours to allow the flavors to develop.
- Enjoy on sandwiches, wraps, crackers, or over fresh greens.
