Ingredients
1 First Street rotisserie chicken, shredded or chopped
2 celery stalks, thinly sliced
4 green onions, sliced
1 apple, diced
â…“ cup sliced almonds
â…“ cup plain Greek yogurt
â…“ cup mayonnaise
Juice from ½ lemon
2 tablespoons Dijon mustard
Salt, to taste
Black pepper, to taste
Directions
  1. Remove the skin and bones from the rotisserie chicken and chop or shred the meat into bite-sized pieces. Add the chicken to a large mixing bowl.
  2. Add the celery, green onions, diced apple, and sliced almonds to the bowl with the chicken.
  3. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and black pepper until smooth.
  4. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  5. Taste and adjust seasoning if needed.
  6. Serve immediately, or cover and refrigerate for at least 1–2 hours to allow the flavors to develop.
  7. Enjoy on sandwiches, wraps, crackers, or over fresh greens.
